AIP Apple, Pear & Cranberry Crumble

Hello and Happy New Year to you! I have a special announcement for you below, but first, I wanted to share our latest recipe. This delicious and comforting dessert comes to us by way of Nutritional Therapy Practitioner and Certified AIP Coach Kate Jay. It’s gluten-free, dairy-free, grain-free, refined sugar-free, Paleo and Autoimmune Paleo compliant.

When warm from the oven this trio of winter fruits makes the perfect end to a chilly day, especially topped with coconut ice cream. Kate’s version contains a range of spices in a topping that’s unlike other crumbles. The extra preparation creates an addictive mix of flavors. Hot, warm or cold from the fridge the next day—however you eat it, we hope you enjoy this dish of AIP sweetness.

My thyroid problem began with nickel poisoning from a birth control device. And with a whole host of other issues that made me very sick over the past 7 years. My levels swing from Hypo to Hyper and I struggle daily to keep up with med changes. But I can say the thing that has helped the most with my levels is staying gluten-free.
