Create Countless Thyroid-Friendly Breakfasts
When you’re managing hypothyroidism or Hashimoto's, finding breakfasts that meet common dietary restrictions, like being gluten and dairy-free, can feel overwhelming, but it doesn’t have to be. This recipe is a simple, flavorful staple on which you can build countless colorful, nutrient-dense breakfasts that will keep you energized all day long. And the great thing about making your own easy homemade breakfast sausage is that you get to control exactly what goes into it—no preservatives, nitrates, flavors, colors, or mechanically separated meats were used in the making of this breakfast sausage!
Flavor-wise, I would describe this as a traditional-style breakfast sausage with lots of versatility for things like breakfast hashes, GF breakfast sammies, breakfast tacos, or, of course, on its own. I like to serve a patty or two alongside an anti-inflammatory smoothie for an extra dose of blood sugar-balancing, muscle-supporting protein.

Batch-Cooking, Freezing, and Reheating Tips
One of the best parts of this recipe is how well these sausages freeze. You can double (or even triple!) the recipe and keep your freezer stocked for those days when you need a quick reheat-and-eat breakfast.
If you're planning to freeze, prepare sausage patties as directed, being careful not to overcook and dry out the sausage, and set aside to cool completely before storing.
Here’s how to keep them fresh and easy to grab:
- Freezing Option 1: Cool the patties completely, and then place in a freezer-safe dish between layers of parchment.
- Freezing Option 2: Freeze the patties individually on a baking sheet lined with parchment paper before storing them in a freezer bag. This option adds an extra step but you'll have nicely separated patties!
- Reheat from frozen in the microwave at half-power to avoid drying out the sausage. Time depends on your microwave, but start with about 1 1/2 minutes for two patties at 50% power.
